One of the best parts of living at Catalyst Apartments in Chicago is our spacious kitchens capable of cooking a five-star meal. However, it’s not necessary to use nearly every pot and pan we have at our disposal. In fact, you can create creamy one-pot pasta dishes with ingredients found mostly in your pantry. These easy-to-make recipes will rival those made in some of the best Italian restaurants in Chicago.
A Lighter Heavy Cream
Many decadent pasta dishes rely on heavy cream. Instead, we can substitute condensed cream soups like broccoli, mushroom, chicken, or celery. They often have fewer calories and fat compared to using heavy cream. And as an added bonus, they’re almost always are kinder to those who are lactose intolerant.
For example, in this one-pot recipe from Tasty, substitute a ten-and-a-half can cream of chicken (or one of the other flavors). If you don’t have fresh or jarred garlic on hand, consider using either garlic salt or powder instead.
More Quick and Easy Pasta Dishes
Boil the noodles according to package directions (usually 10-12 minutes in most cases) first. Drain most (but not all) of the water, add the soup, and stir lightly with a spoon to combine until creamy. The ratio is about one 10-1/2 ounce can to 8 ounces (or a half box) of cooked pasta and some of these combinations:
- Broccoli cheese (add fresh or frozen broccoli when boiling the pasta during the last five minutes)
- Cream of mushroom with canned tuna or chicken (add frozen peas during the last five minutes of boiling to add color and flavor)
